I noticed that there are no liter+ bikes on the list. Not even the Versys 1K or the big Vulcans.

Ya, nothing there I would be interested in.

I could see trying the ZX-6R, but I think the pace of the ride would be so slow that it wouldn't even be comfortable, much less useful for getting a feel for the bike.

No, you can totally get an idea of how unsuited it is for short slow in town trips. Unless you’re 25 of course.

I’ll be there Friday to ride the ninja 400 and 650. I doubt I’d ever get one, but it’s fun anyway
