My first oil change

I just completed my 600 mile oil change and when the bike is running there is no oil visible in the sight glass. Do I need to add oil or not? My bike is a GSXR 600, I put about 2.75 quarts in it and when the bike is not running the sight glass shows to be just below full.

Any advice would be helpful

You want to set the oil level when the bike is off. Run it for a few minutes, kill the engine, wait a few minutes, check the oil level. Sounds like you've got it OK.

My GSXR 600 takes 2.8 when I change the filter. I think you are okay.

Sounds like you have it right but also make sure the bike is in an upright position on level surface with engine off when you look through the sight glass.
